Chapter 01
1991

Brennan's of Houston

Oscar Gonzalez didn't start with investors or a design firm. He started with a knife, a dream, and thirty years of relentless excellence. In 1991, Oscar Gonzalez began his culinary journey training at Brennan's of Houston — one of the most celebrated fine-dining institutions in Texas, known for its French-Creole cuisine and white-tablecloth standard. He didn't just work there. He learned what excellence tasted like.

2005

Executive Chef — Walden Golf Club

After nearly two decades in Houston's finest kitchens, Oscar Gonzalez landed as Executive Chef of the Walden Golf Club in Montgomery — a position he held for eighteen years. Under his direction, the club became the gold standard for dining around Lake Conroe. Members didn't come just to golf. They came for his food.

Chapter 03
2023

The Food Truck

In May 2023, alongside his wife and co-owner Elaine Gonzalez, Oscar Gonzalez launched the Welcome to Oscar's food truck on Highway 105 in Montgomery. People drove out of their way. Lines formed. The fish tacos became famous before the truck was six months old.

Chapter 04
2025

The Bistro Opens

On January 21, 2025, Oscar Gonzalez and Elaine opened the full bistro restaurant at 107 Old River Rd, Suite I — and Montgomery hasn't been the same since. The food truck became a full-service restaurant. The dream became real.
