Every bistro has an origin. Ours begins in a Montgomery parking lot, on a humid weekend, with a food truck, a small crew, and a single rule — cook everything from scratch, every time.

A Food Truck With a Chef's Discipline

We opened Welcome to Oscar's as a food truck because we wanted to prove something simple: you don't need a dining room to earn a reputation. What you need is sharp technique, honest sourcing, and a menu you actually believe in.

Signature Plates That Built the Following

Our Baja fish tacos, pecan-crusted flounder, and tableside guacamole became the reason guests drove across Lake Conroe to find us. That loyalty is why we eventually opened a full bistro at 107 Old River Road.
